Beef Penne Pasta in Tomato-Mushroom Cream Sauce

The other day I was trying to figure out what to cook for supper. I didn’t have a lot of fresh vegetables on hand, just some onions and semi-wilted celery. The following is the “recipe” I came up with. It was very tasty, and I hope you like it as much as my family did!

 

Ingredients

4 stalks celery, diced.

1 large yellow onion, quartered and then thinly sliced.

1 pound of hamburger, browned.

16 ounces of penne pasta, cooked al dente and then drained.

1 can of mushroom soup.

1 can of tomato soup.

2 cans of milk.

3 tablespoons of my homemade ranch dressing.

1 teaspoon each of garlic powder, Italian seasonings, dried chives.

 

Directions

 

Prepare pasta according to instructions. Cook until al dente, and drain.

Set aside to put into the sauce when it is done.

Place 1 pound of hamburger into a Dutch oven. Sprinkle with the garlic powder, Italian seasonings, and chives.

Brown the meat evenly over medium-high heat, cooking until there is not any pink/blood in the meat.

Drain the meat.

Return the meat to the pot, adding the onion and celery.

Stir well and cook over medium-high heat until onions are translucent about 3-5 minutes.

Add in both cans of soup, the ranch dressing, and the milk.

Stir well and cook on low heat until sauce bubbles up and is warmed through, about 15 minutes.

Stir in the cooked and drained pasta. Stir well until all of the pasta is coated.

Simmer for an additional 2 to 3 minutes.

Sprinkle with some chopped chives or parsley to brighten it up. Serve hot with slices of toasted garlic bread on the side.

 

This recipe wasn’t that expensive to make, the most costly item was the meat, at $3.00 a pound. I use the generic condensed soups from the grocery store, and they were 50 cents each. I make our ranch dressing at home, and it is simply mayo, sour cream, milk, garlic powder, and Italian seasonings, shaken up and chilled before serving. I can make a pint for about $1.50 or less, and used way less than that amount in this recipe. The noodles were $1.00, and I used another dollar’s worth of veggies and spices. I picked up a loaf of garlic bread from my local store for, you guessed it, $1. The total cost for this meal that serves 8 was around $6!

On a side note, I want to apologize for the quality of the photo I am using in today’s post. I took it with the built-in camera on my laptop, and, it didn’t really turn out that well. I am planning on investing in a smartphone soon, one with a decent camera, so hopefully I will be able to include better images in my posts soon!
